The Colorado Wine Board is hosting a Food Safety Modernization Act Compliance training for wineries on Monday, May 21 beginning at 9:00 AM .  The workshop takes place at CSU’s CoBank Center for Agricultural Education, 4492 E. County Road 56, Fort Collins, CO 80524.

Please note that this workshop was originally scheduled for a day and a half, however, we will be able to effectively cover all the material in one day, starting at 8:30 AM for sign-in and coffee, and ending before 5 PM.

The Food Safety Modernization Act of 2011 (click on link for more information on FSMA) is the most sweeping reform of the USA’s food safety laws in decades. Although businesses regulated by the TTB are exempt from some of this Act’s regulations, wineries are still subject to many parts of the act, primarily registration and inspection.

This one-day workshop will guide wineries through the process of creating your own individualized documents to satisfy FSMA requirements. The process of creating these documents will support you in improving the quality controls in your winemaking as well as educate health inspectors visiting your business so they better understand your operation and why wine does not present the same kind of food safety risks that other food products do.

These documents include:

  • Good Manufacturing Procedures (GMP)
  • Sanitation Standard Operating Practices (SSOP)
  • Hazard Analysis Critical Control Points (HACCP)
  • Food Safety Plan (FSP)

Leading this training are Tamla Blunt, CSU Extension Specialist who is a certified FSMA Preventive Controls trainer and works in the Plant Diagnostic Lab for CSU’s Department of Bioagricultural Sciences and Pest Management, along side Dr. Stephen Menke, CSU State Enologist from the Western Colorado Research Center–Orchard Mesa.

The registration fee is $100 per winery and includes:

  • two attendees from each winery
  • lunch and coffee and pastries
  • electronic documents on a thumb drive or on the Cloud that you can customize as you create your own FSMA required documentations
  • Bring a laptop computer with you to customize your compliance documents during the workshop
